The driving force behind this extraordinary venture in Co. Wicklow is Evan Doyle, whose Strawberry Tree Restaurant in Killarney gained fame for a commitment to using wild, free-range and organic produce, long before these became buzz words. Now the restaurant has a new home in BrookLodge Hotel.

The original philosophy still prevails; farmhouse cheeses are from Sheridans Cheesemongers, meat from Hugh Robson's organic farm in Co. Clare, smoked fish from Frank Hederman in Cobh, Co. Cork and organic vegetables from Denis Healy - although as their own walled organic garden becomes established, an increasing amount of produce is grown just outside the kitchen. Organic food markets, held on the first Sunday of the month (first and third in summer) are another special attraction.
